The Interweave (publishers of Interweave Knits and more besides) How to Knit section is packed with articles and videos, Learning to Knit as an Adult: An Article Roundup is a good place to start. Their advice includes a guide to yarn types, some good beginner patterns and how to fix some common mistakes.
KnittingHelp.com has a series of free knitting videos starting with How to Knit: A Complete Introduction for Beginners
